What do you think of taking your dog on vacation with you?

I adopted a German Shepherd from the shelter 4 months ago whom I love with all my heart. She is my baby and I can’t stand to be without her. If we go visit my parents for the weekend (who aren’t animal people and won’t let her come along), I miss her SO much that I can’t wait to get home to her. We’re thinking of taking a driving trip this Christmas but I don’t want to go unless my husband will let me bring her. He thinks I’m being ridiculous because we wouldn’t be able to go inside buildings with her. We have a good dog sitter who takes care of her and the other pets and walks her daily, but still… I miss her and she misses me. Am I being ridiculous? I can’t have children so my GSD is my everything (besides hubby of course). Any tips for taking a dog on vacation? Like what can I do with her if we want to go skiing or do an activity that doesn’t allow dogs?
P.S. She is VERY sweet, loves people, loves riding in the car. I’ve already taken her on a 1000 mile each way trip to the forests of WA and she was great, but I went alone with her (no husband) and she was with me pretty much ALL the time. She LOVED hiking in the forests like I do and she learned how to swim! I even felt safer travelling with her cuz she looks so big & vicious, but she’s just a big teddy bear :)
