Help, need family vacation ideas, driving from Texas?

My husband and I would like to take a family vacation the first week of April. In April our kids will be 3 1/2 yrs. old and 9 months old. My husband wants to go skiing in Colorado (I found out they are still open in April) but that won’t be much fun for our 9 month old, even though she is too young to understand, I would still like to have her out with us and not stuck inside a cabin with a babysitter. Anyway, any suggestions? We live in central Texas and we want to drive. We also wan to try to keep the total around $1,000 at the most $1,500 but my husband said $1,000, lol. Thanks!
Forgot to mention, we would like to stay 4 nights and Disney World would be fun, but we’re wanting to go somewhere that won’t be too packed…but thanks for the recommendation!
