Where’s a good place to have a “snow vacation”?

We live in Texas and my children have never seen snow. Where would be a good place in a nearby state (New Mexico, Colorado?) where we could rent a cabin and just enjoy the snow. We’re not interested in skiing or snow sports, just want to experience something different. All the information I’ve found is for ski resorts.
